A waiter working a section at the far end of a 30-metre room walks more than 2 kilometres during a four-course banquet.
If the aisles are narrow or zigzag between tightly packed round tables, every trip takes 15 to 30 seconds longer per plate, and the delay accumulates across the whole room.
Sideboards and service stations
Putting sideboards with water, bread, wine and spare cutlery halfway down the room reduces trips to the main kitchen to the moments when hot plates are actually going out.
One-way circuits, in and out
Wherever the building allows it, set one door into the room for full plates and a separate door for dirty crockery going back to the wash-up.
